If you are an EU citizen, there are no problems.
If you are Canadian / Australian you should apply for a “working / holiday visa” at the Italian Embassy (or local consulate) in your country. They are relatively easy to obtain (no specific requirements) and last 6 months.
If you are American, you need either a “visa for work” (not a tourist visa) which must be applied for in very good time. The only other solution is a scholastic program through an authorized institution in Italy who provides all the necessary insurance that is required. This is the best solution we’ve been able to find with the Dante Alighieri language school in Siena: 2 weeks of Italian language studies at the school of Dante Alighieri in Siena.
12 weeks of work (6-8 hrs per day) at our Slow Food restaurant “Officina della Cucina Popolare” in Colle Val d’Elsa.
Our restaurant will offer room and board for the entire period (14 weeks).
